The International Institute of Culinary Arts has begun offering healthy cooking classes, including "Mediterranean Cuisine" on August 9th and 11th, and "Cooking Light and Healthy" from August 15th through 19th, at their facility at 100 Rock Street. Chefs Mike Petibon and Robert Castagna will teach easy recipes for flavorful and flexible sauces and entrees that are low in fat and calories. "This is the first time we have opened the Institute to the public to take classes and we thought courses to teach healthy eating would be an important addition," commented Jane Darcy of the Institute staff. "In fact, we'll be offering an entire week of healthy Mediterranean cooking on our menu from August 15th through the 20th for anyone who would like to sample this style of cooking," she added. The International Institute, which trains chefs who go on to work all over the world, is one of the newest Healthy City Fall River Action Plan Participants.
