The National Council on Aging (NCOA) estimates that one in four older adults suffers from a poor diet. In order to remedy that, Bristol Elder Services has teamed up with Steward Home Care to offer cooking demonstrations at Fall River Housing Authority senior housing sites. A team came to the Mitchell Heights Apartments on South Main Street in Fall River on June 29, 2016 to put on a healthy cooking demonstration for residents there. Bristol Elder COO Judy Klein led the group that included Nutrition Director Debra Carreiro, Supported Housing Case Manager Brittany Kindberg, Home Care Team Manager Beth Calvin and Steward Home Care Community Liaison Julie Livingstone. The group demonstrated a crock-pot recipe for chicken caccitore that is both economical and nutritious. "It's a tried and true recipe," noted Klein who read the recipe aloud while the team brought the ingredients to the table where residents could participate in making the dish. Once it was assembled, the dish was cooked for three-and-a-half hours in crock pots so residents could return to take a portion with them. Click here for a twelve-minute video of the presentation.
